WONDER GEL is a group of functional ingredients obtained by modifying the agar agar. They are processed in controlled conditions to maintain the natural benefits of seaweed fiber. Wonder Gel are having very good adaptability in applications where pure agar are normally not suitable.
As a result of intensive research, we are in a position to offer Wonder Gel of a wide range of texturing and gelling properties. Wonder Gel will dissolve at lower than boiling temperature. Its application in the instant food market will be enormous.
ADVANTAGES OF WONDER GEL
Wonder Gel has excellent water binding capacity up to 99% of water. This helps to maintain product stability and minimizes syneresis during product shelf life. High water binding capacity helps to impart a pleasant and full mouth feel to the final product.
GOOD SYNERGY WITH SUGAR
Wonder Gel maintain an excellent performance in application with high sugar contents. i.e., confectionary products and filling jams.
DOES NOT REQUIRE GELLING AIDS.
Wonder Gel forms cohesive gel dissolved completely in water at less than boiling temperature: without adding salts or functional ingredients to promote gelling (For example- KCL is needed in standard carrageenan)
Just like Agar Agar Wonder Gel is also completely thermo reversible. This flexibility is of great advantage in production application.
LOW MELTING AND GELLING POINT
The structural and molecular modification of Wonder Gel products give a unique capability of the final product to melt at human body temperature condition. This imparts a pleasant and rich “melt -in-your-mouth” effect that mimics animal gelatin.
LOWER DOSAGE AND SINGLE INGRADIENT REQUIREMENT.
Lower dosage: For applications where animal gelatins are traditionally used.Increased tendency in food industries to use single ingredient in place of blends for tighter quality control during production. For example Wonder Gel can be used as replacement for Hydrocolloid blends such as quick soluble agar and low methoxy pectin in yogurt application.
NON ANIMAL ORIGIN PRODUCT.
Vegetarian and vegan population are growing and demanding more products with ingredients of no animal origins.Food factories prefer to avoid animal origin ingredients.Religious control bodies’ are extremely strict in animal origin products and the certification is more complicated and expensive. (Eg:- HALAL, KOSHER CERTIFICATIONS).Many food safety bodies require precise information about the origin of cattle, pigs etc. to be sure there are no prion infections that can trigger mad cow diseases or swine flu etc.
PURE DIETARY FIBER
Red seaweeds contain up to 10 times more total dietary fibers and about 50 times as much in soluble dietary fiber.They are also rich in functional minerals that are essential for good metabolism. Agar Agar and carrageenan are extracted from red seaweeds.
